Lowcountry Shrimp and Grits Recipe

- 1 lb shrimp (thawed, peeled)
- 5–6 slices thick-cut bacon
- 1 cup stone-ground grits
- 4 cups chicken broth
- ½ cup heavy cream
- 1 cup sharp cheddar (fresh grated)
- 3–4 cloves garlic (or 1–1½ tsp minced)
- 1 lemon
- 2–3 green onions
- Fresh parsley + thyme
- 2–3 tbsp butter
- Old Bay
- Salt + pepper
Instructions
Step 1: Prepare the shrimp
Pat shrimp dry. Season with Old Bay, black pepper, and a squeeze of lemon juice. Set aside.
Step 2: Start the grits
In a medium pot, bring chicken broth and salt to a simmer. Slowly whisk in the grits. Reduce heat to low and cook for 20 to 30 minutes, stirring occasionally until creamy. Add a splash of broth or water if they get too thick.
Step 3: Cook the bacon
Place bacon in a cold skillet and turn heat to medium. Cook until crispy, flipping as needed. Remove bacon and set aside, leaving about 1 to 1 1/2 tablespoons of bacon grease in the pan.
Step 4: Cook the shrimp
Add garlic to the skillet and cook for about 20 to 30 seconds. Add shrimp in a single layer and cook 1 to 2 minutes per side until pink and cooked through. Remove shrimp and set aside.
Step 5: Make the pan sauce
Add chicken broth, butter, and lemon juice to the skillet. Stir and scrape up the browned bits from the pan. Return shrimp to the skillet and toss to coat.
Step 6: Finish the grits
Stir in butter, heavy cream, and shredded cheddar cheese. Mix until smooth and creamy. Taste and adjust seasoning if needed.
Step 7: Plate and serve
Spoon grits into a bowl. Top with shrimp and pan sauce. Sprinkle with crumbled bacon, green onions, and parsley. Add a lemon wedge on the side and a light sprinkle of Old Bay if desired.
Notes
Stone ground grits take a little longer, but the flavor and texture are worth it.
Do not overcook the shrimp. They cook quickly and should stay tender.
This dish is rich, comforting, and perfect for bringing a taste of the Lowcountry into your kitchen.
